Strawberry Angel Food Ice Cream Cake: A twist on the traditional Mother's Day cake recipe, this variation is a hit with moms and kids.
  • 1 prepared angel food cake
  • 1/2 gallon vanilla ice cream, softened
  • 2 quarts fresh strawberries, sliced
  • 1 tbsp. sugar
  • 1 tbsp. fresh lemon juice
  • 2 cups heavy whipping cream
Whisk milk and pudding mixes in a large bowl. Add vanilla and allow the pudding to set. Spoon into ramekins and set aside. Melt semisweet chocolate with oil in the microwave. Spoon on top of the pudding and chill for 10 minutes. Melt the white chocolate. Top each ramekin with blueberries and drizzle with white chocolate.
Lemon Cake with Drizzle: The Mother's Day cake with infinite possibilities - top with fruit, serve with coffee and tea or make as cupcakes.
Glaze
  • 1 1/2 cups powdered sugar, packed
  • 2 tbsp. fresh lemon juice
Cake
  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tbsp. finely grated lemon peel
  • 3/4 teaspoon vanilla extract
  • 1/2 cup (1 stick) unsalted butter, melted
To make the glaze, combine the sugar and juice in a small bowl and stir until it become like a paste. Set aside. For the cake, butter a 9-inch cake pan and line with parchment. Combine flour, sugar, baking powder and salt in a large bowl and whisk. Whisk buttermilk, eggs, lemon peel and vanilla in another bowl. Pour this into the flour mixture. Using a spatula, fold both together and spread into the pan. Bake for about 30 minutes at 350 degrees. Remove cake from pan  and drop the glaze onto the cake while hot. Spread to the edges and cool.
Nutella Gelato: Of all our Mother's Day dessert ideas, this frozen treat is the most delectable. Serve with cookies or in a sugar cone.
  • 1 1/2 cups skinned hazelnuts
  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 cup sugar
  • 1/8 tsp. fine salt
  • 8 large egg yolks
  • 1/3 cup Nutella
Spread hazelnuts on a baking sheet and bake 8 minutes at 350 degrees. Cool and chop. Combine hazelnuts, milk, cream, sugar and salt and simmer on medium heat. Remove from heat and allow to sit for one hour. Strain through a sieve and keep only the liquid. Whisk the yolks until smooth and add the milk mixture. Return to the saucepan and cook until it thickens enough to coat the spoon. Strain into a bowl and set in ice water. Refrigerate two hours. Freeze in an ice cream maker and add the Nutella, one spoonful at a time, churning to combine. Serve within three days.
