2/3 cup all purpose flour
¼ tsp baking powder
¼ tsp baking soda

1 15-oz can pumpkin puree
½ cup white sugar
¼ cup brown sugar
2 large eggs

¾ cup half and half (or evaporated milk)
Preheat the oven to 350 degrees and line 12 muffin tins with cupcake liners. In a medium bowl, mix together the flour, baking powder, baking soda, salt, and pumpkin pie spice, removing all lumps. In a larger bowl, mix together the pumpkin puree, white sugar, brown sugar, eggs, vanilla, and half and half. Whisk in the dry ingredients and mix until smooth. Spoon into the cupcake liners, filling about 1/3 of the way. Bake for 20 minutes or until the top is golden brown, and cool completely before serving.
