What’s one of the best things about a BBQ? Dad is cooking. Especially on Mother’s Day, let mom sit back and relax. Invite friends and family over for a late afternoon BBQ to enjoy good company and the mild weather.
Just because it’s a BBQ doesn’t mean you have to serve just hot dogs and hamburgers. Make this a classier event, and provide special menu items that everyone will love. Here are 3 recipe ideas for your perfect Mother’s Day BBQ!
Grilled Lobster Tails
Serves 3 to 6
- 6 lobster tails
- ¼ cup olive oil
- ¼ cup fresh lemon juice
- 1 tbsp. fresh dill
- ¼ tsp. salt
- ¼ tsp. black pepper
Preheat grill to medium-high heat. Cut lobster tails in half lengthwise, exposing the flesh. Combine remaining ingredients in a small mixing bowl. Brush mixture onto flesh side of lobster tails. Place lobster onto grill and cook for 5-7 minutes, depending on the size of the lobster tail. Make sure to turn once during grilling. Remove from heat and serve.
Slow-Cooked Baby Back Ribs
Note: Number of racks depends on number of guests (Plan on each guest eating 3-4 ribs)
- Store-bought dry rub of your choice
- Barbecue sauce
- Pork baby-back ribs
Preheat oven to 250º F.. Line a baking sheet (you might need more than one) with heavy-duty aluminum foil and place ribs on the foil. Sprinkle dry rub on both sides of the ribs and pat the spices into the meat. Put in oven and bake for about 2 hours and 15 minutes. A few minutes before the time is up in the oven, light the grill. Take the ribs out of the oven, slather with barbecue sauce, and finish them on the grill for 7 to 10 minutes. Allow to cool before serving
Beer Can Chicken
- 1 whole chicken (about 4 pounds)
- 1 12 oz. can beer (room temperature)
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 tsp. olive oil
- 1 tsp. dried thyme
- ½ tsp. red pepper flakes, crushed
- Juice of 1 lemon
For the Rub:
- 1 tsp. paprika
- 1 tsp. salt
- 1 tsp. fresh rosemary, chopped
- 1 tsp. dried thyme
- ½ tsp. black pepper, ground
- ½ tsp. lemon zest
Combine all the dry rub ingredients in a small mixing bowl. Set aside.
Remove giblets and the neck from chicken. Sprinkle all over with rub, including cavity. Open can of beer and discard half of it. Place, minced garlic, rosemary, thyme, lemon juice, and pepper flakes in it. Make sure to pierce two more holes on the top of beer can. Place chicken on top of can (cavity-side down), set inside of a deep baking pan.
Preheat grill to medium heat. Place the pan with the chicken on the grill. Grill over indirect medium heat for 1 ½ to 2 hours until internal temperature of thigh is 180º F. When cooked, remove chicken and let sit (with beer can still intact), for 10 minutes before carving.
Don’t forget to serve some fun drinks! Have a cooler where guests can help themselves. For decorations, use checkered tablecloths, tea lights, and bright flowers.
