Gingerbread Cookie Recipe

Ingredients:

  • 1 cup of white sugar
  • 2 ½ teaspoons of ground ginger
  • 1 teaspoon of ground nutmeg
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of salt
  • 1 ½ teaspoons of baking soda
  • 1 cup of melted butter
  • ½ cup of evaporated milk
  • 1 cup of unsulfured molasses
  • ¾ teaspoon of vanilla extract
  • ¾ teaspoon of fresh lemon juice
  • 4 cups of unbleached all-purpose flour

Directions:

Preheat your oven to 375 degrees and grease your cookie sheets ahead of time. Combine your sugar, ginger, nutmeg, cinnamon, salt, and baking soda in a large bowl, and then stir in the melted butter, evaporated milk, molasses, lemon juice, and vanilla extract. Continue to stir thoroughly, and add your flour one cup at a time.

Does the dough stick to your fingers? If sticky, add a bit more flour. Chill the dough for an hour or two in the refrigerator to let it harden, which will make it easier to roll out.

Next, roll your dough onto a lightly floured surface at about a ⅓ inch thickness, and cut it into your favorite holiday shapes. Arrange the shapes on greased cookie sheets. Alternatively, you can roll out the dough and use this ginger bread cookie recipe to make gingerbread houses!
