Salads are a great cookout side dish because they're light, easy, and often healthy! It's nice to give guests a couple of options when it comes to salads. Between pasta salad, potato salad, and the increasingly popular, Mediterrranean salad, guests will certainly find something they like.

Here are three delicious salad recipes that will delight guests at your cookout:

Easy Cold Pasta Salad Recipe

Ingredients:
- 1 small red onion (diced)
- 1 small green pepper (diced)
- 1 small red pepper (diced)
- 1 large carrot (diced)
- 1 can whole corn (drained)
- 1 can diced tomatoes (drained)
- 1 bottle Italian dressing
- 1 box Rotini pasta
- Dash of pepper

Directions: Cook pasta according the directions on the box and rinse in cold water. Pour the pasta into a large bowl and add in the vegetables. Pour the dressing over the pasta and mix. Add more dressing if necessary and add a dash of pepper to taste.

Mediterranean Salad

Salad Ingredients:
- 1 cup red onion (diced)
- ½ cup green onion (diced)
- 1 cup avocado (diced)
- 1 cup tomatoes (diced)
- 1 cup cucumber (diced)
- 2 cups chickpeas
- 2 cups shelled edamame
- ½ cup crumbled feta cheese

Dressing Ingredients:
- 1-1/3 tbs. salt
- 1-1/3 tbs. pepper
- 1-1/3 tbs. oregano
- ½ cup lemon juice
- ½ cup extra virgin olive oil

Directions: Combine all of the dressing ingredients in a bowl and whisk until fully mixed. In a separate serving bowl, combine all of the salad ingredients except for the feta cheese. Use a large spoon to mix all of the ingredients together. When ready to serve to guests, add the feta cheese and pour the dressing over the salad.

Mom’s Potato Salad Recipe

Ingredients:
- 6 eggs (hard cooked and chopped)
- 10 red potatoes
- 1 red onion (chopped)
- 2 cups diced celery
- 1 ½ cups mayo
- 1 cup sour cream
-  ½ cup ranch dressing
- 1/3 cup dill pickle relish
- 1 tbs. chopped fresh dill
- ½ tsp. ground black pepper
- 1 tsp. salt

Directions: Wash potatoes and cut into ½ inch pieces. Place them in a large sauce pan, cover with water, and bring to a boil. Once water is boiling, turn down the heat to medium-low and cover and cook potatoes for about 15 minutes. Drain potatoes and place in a large bowl. Once the potatoes have cooled, add the diced celery, chopped egg, and onion. In a separate bowl, combine the mayonnaise, sour cream, ranch, dill, dill relish, pepper, and salt. Add it to the potato mixture and mix until well blended. If necessary add more mayonnaise until you get the right consistency.
