Celebrate Mardi Gras with this Gumbo Recipe

 The celebration of Mardi Gras incorporates music, decorations, parades, beads, and costumes. But don't forget about the Mardi Gras food. Celebrate Mardi Gras with a traditional New Orleans dish: Gumbo! This fantastic gumbo recipe is perfect for your Fat Tuesday party or a smaller, more intimate Mardi Gras celebration.
Ingredients: 
  •  12 cups water
  •  2 lbs medium shrimp (peeled and deveined)
  •  2 lbs chopped okra
  •  1/2 cup olive oil
  •  1 tbs tomato paste
  •  1 cup chopped onion
  •  1/2 cup chopped celery
  •  1/2 cup chopped green bell pepper
  •  1/2 cup chopped green onion
  •  4 garlic cloves, minced
  •  1 tomato, chopped
  •  salt, pepper, and cayenne pepper to taste
Directions: 
 Season the shrimp with salt, pepper, and cayenne to taste and set aside. Heat the olive oil in a large pot over medium heat and add the okra. Sauté for 30 minutes, stirring occasionally. Add the tomato paste, tomato, onion, garlic, celery, green bell pepper and continue to sauté for another 15 minutes.
 Once you are done sautéing, add the water and bring to a boil. Reduce heat to low and let it simmer for 45 minutes. Add the seasoned shrimp and let it simmer for 20 more minutes. Finally, add the green onion to the soup and stir thoroughly. Serve over white rice.
